Dear, I found your nutritional value and RWS calculator on the Internet, a great program, but when we checked this free version we were surprised by the option of subtracting/adding mass in the technological process. We produce pates and preserves, including those with rice, such as the paprikasz you are probably familiar with. In products with rice, there is an increase in mass. Does this mean that we should take it into account? So these values should be calculated for 100g of the product ready for consumption, after the mass increase? It seems logical, because the values will spread over a larger mass because water does not contribute anything. But how do you calculate the size of this increase, because we have calculated it more or less experimentally. Will the results be good? Please let me know what will be in accordance with legal regulations if you have such knowledge. Best regards.

EXPERT ANSWER:

Exactly as you suspect, nutritional values will be distributed over the entire mass of the product and should be calculated taking into account the increase in mass.

In the Foodcal Calculator, when entering the recipe for calculations, the program asks whether there is an increase or decrease in mass. If you select the answer that it has no effect, the program will calculate the values taking into account that there are no technological processes changing the nutritional values. However, if an increase in mass is indicated, as in the discussed case, then the amount of this increase should be defined. In the Foodcal program, this can be done in two ways - immediately specify the amount of the product mass after the increase and the program, thanks to the programmed functions, will automatically calculate the nutritional values for this increased mass. You can also enter the percentage value of the increase in mass, if someone has previously calculated it and defined it as a percentage value. In this case, the program will also calculate the values independently.

We hope that your doubts have been dispelled. We invite you to use our software, and if you have any further questions, we will be happy to help.
